EMBER
Fire-Led Dining at The Stag
Smoke.
Charcoal.
Flame.
Some flavours simply cannot be replicated in a conventional kitchen. At Ember, fire isn't a finishing touch. It's where every dish begins.
The Kasai
The Grill at the Heart of Ember
At the centre of our kitchen sits a British-made Kasai charcoal grill.
Over one metre long and fuelled by premium British-made Sumi Bincho charcoal, it burns hotter, cleaner and longer than traditional charcoal.
The result is intense heat, exceptional control and flavours that only live fire can create.
Why Fire Matters
Cooking over charcoal isn't simply about adding smoke.
It's about texture.
It's about depth.
It's about creating a crust on a steak while keeping the centre beautifully tender.
It's about vegetables that become sweeter, fish that develops complexity and ingredients that gain character through flame.
Dan's Approach
Simple Ingredients. Layered Flavour.
While the fire provides the foundation, flavour comes from careful attention to detail.
House-made oils. Seasonal accompaniments. Thoughtfully balanced sauces.
Coal and hay oils used to enhance and complement dishes.
Every component is designed to work alongside the flavour of the fire rather
than compete with it.
The Menu
Menus evolve regularly depending on seasonality and availability.
Expect:
Salt-aged cuts
Fresh fish
Seasonal vegetables
Small plates
House-made accompaniments
More Than a Meal
Ember isn't designed to be rushed.
It's a chance to slow down, enjoy great food and experience the theatre that only live-fire cooking can provide.
